Large highball, shaken, topped with club soda
- 2oz Mezcal
- 3/4oz salted watermelon syrup
- 3/4oz lime
- 1 dash Angostura bitters
- 4oz club soda
Salted watermelon syrup is 1/2 cup juice to 1/2 cup sugar to 1/2 teaspoon salt. Shaken until dissolved.
Garnish this with a bunch of mint & a watermelon slice. Need a highball glass with plenty of room. Regular ice is better because it holds the mint down at the bottom. Clear glass so you can see the pink/mint leaves, maybe something textured/deco from CB2 but you could also look into a bigger julep cup. I might try to work a muddled strawberry into this one tonight.
